What Coffee to Use: Most Vietnamese coffee is the Robusta variety , which tastes “off” unless dark-roasted. It is often a blended with chicory. Vietnamese coffee is available in the US, but we prefer a dark-roast Indonesian coffee (ie: Sumatran or Papua New Guinea). These coffees have, you might say, a strong, “adult” flavor, close to espresso. But, Vietnamese-style coffee tempers this with the addition of sweetened condensed milk…commonly used because fresh milk in Vietnam is hard to find, or saved for children!

Directions for Preparing Vietnamese Coffee…The knacks you must master are: How much coffee to use; the grind of the coffee to use (to keep grounds from coming thru the relatively coarse filter); & how much to tighten the top filter. This takes some practice, but once mastered, you’ll enjoy great coffee.
